Description:I found this recipe from Homes & Gardens magazine special edition of Appetizers. Easy to make and outstanding in flavor. I made mine with more lemon juice than the recipe calls for and pinch of sea salt and fresh cracked pepper to taste.

Ingredients:1 8-once package flake-style imitation crab meat, broken up
2 tabs mayonnaise
2 tbs dairy sour cream
2 tbs chopped green onion
1 tbs snipped fresh dill
juice from 1/2 lemon
3 tbs butter, softened
1/8 tsp cayenne pepper
4 English muffins, split
4 slices Swiss cheese
Directions:Preheat boiler. In a medium bowl, combine imitation crab meat, mayonnaise, sour cream, green onion, dill and lemon juice. Set aside. In a small bowl, combine butter and cayenne pepper.
Generously spread outsides of English muffin halves with butter mixture. Place four of the muffin halves, buttered sides down, on a baking sheet. Top with cheese. Broil 4 to 5 inches from the heat for 1 to 2 minutes or until cheese starts to melt.
Spoon crab mixture onto cheese-topped muffin halves, spreading to edges. Top with remaining muffin halves, buttered sides up.
Heat a large griddle or skillet over medium heat. Add sandwiches; cook about 6 minutes or until muffins are golden brown, turning once. Cut each sandwich into four portions.
